Healthy Road Trip Snack; Amazingly Healthy Muffin Recipe
If you are looking for road trip snack ideas, these paleo healthy muffins are a tremendous option! Not only are these muffins healthy, but they taste great and last a while for those longer road trips. This healthy muffin recipe has flexibility with some of the ingredients, so have some fun and bake a dozen for your next road trip, or for a morning snack or meal replacement on the go.
Mike’s Road Trip Healthy Muffins Recipe
INGREDIENTS
- 2 1/2 Cups almond flour or almond meal
- 2/3 teaspoon baking soda
- 1/2 teaspoon fine sea salt
- 3 large eggs
- 1/3 cup apple sauce (or unsweetened pumpkin puree, or even a mashed banana)
- 2 tablespoons of agave nectar (or honey or maple syrup)
- 1 teaspoon apple cider vinegar
- 1 teaspoon vanilla extract (or almond extract)
- 1 teaspoon cinnamon (or orange zest)
- 2 tablespoons of Coconut oil (heat up to liquefy if needed)
- Half a cup of walnuts
- Half a cup of pumpkin seeds
- Half a cup of raisins (or dried unsweetened blueberries)
INSTRUCTIONS
- Preheat oven to 350F. Line 12 cups into a standard muffin tin with paper or foil liners
- In a large bowl whisk all dry ingredients, i.e. the almond flour, baking soda, salt, nuts, etc.
- In a small bowl, whisk the eggs and then mix in all of the wet ingredients, i.e. the apple sauce, agave, raisins, etc.
- Add wet ingredients to the dry ingredients in the large bowl. Stir until well blended.
- Divide batter evenly among the prepared cups
- Bake in preheated oven for 14 to 18 minutes until set in the center and golden brown around the edges.
- Move muffins to a cooling rack and let set for 30 minutes.
- You can enjoy after they have cooled a bit, or, place them in the freezer to keep fresh for a month or more, just pop in the microwave for about 40 seconds to warm them up.
